Syrah (minimum 90%) for the reds, roussanne (95% of the vineyard's grape varieties) and marsanne for the whites.
The grapes have to be hand-picked.
While developing a certain power, the red Saint Joseph is elegant and fine. Its blackcurrant and raspberry aromas, followed by liquorice and leather, characterise it after a few years' cellaring, and its flavours are often appreciated after around ten years.
The white Saint Joseph has scents of acacia, honey and apricot.
